Curried Lentils with Spinach

sauteed finely chopped onion and celery together until
they were semi soft, then added lentils and heaping tablespoons of curry
powder. Covered the lentils with water (1:2 ratio of lentils to water)
and a teaspoon of chicken stock concentrate. Covered and cook for about 40 minutes. Then, stir in some baby spinach if you want!
