I needed to use up my yellow squash in the fridge, and also had red onion, which I don’t usually buy. My cilantro was starting to wilt. This was definitely a product of what-is-in-the-fridge cooking, but hey! It was tastier than I expected.

Sauteed Yellow Summer Squash
-some oil for the pan
-half a red onion, sliced 
-one yellow summer squash, sliced in half lengthwise, then across, to give sliced moons 🙂 
-a generous bunch of cilantro, chopped *
1) Heat a skillet, then add oil.
2) Sautee onion, then add squash. Season w/ S&P. 
3) Cook until the squash is translucent, then turn heat off. 
4) Sprinkle with cilantro, and distribute evenly. 
*If you don’t like cilantro, parsley could work, but know that cilantro will be crying because you aren’t giving him any love!
